The name Don Alejandro has been with the Alvarez family for almost two centuries. In Spain and in all Spanish-speaking countries, a man deserving of the title "Don" is a man in every aspect of the word, brave, honest, gentlemanly, honorable and loyal.
The first Don Alejandro Alvarez was born in 1818 in Monterrey, Nuevo Leon, the largest city in Northern Mexico. When he was 7 years old, his father moved the family to San Antonio, the Mexican State of Texas; It was there that he spent his childhood.
In 1836, when the Texans were trying to gain their independence from Mexico, Don Alejandro joined the war as a Texan. By strange coincidence, in the battle of San Jacinto, after the battle of the Alamo, his cousin Francisco Alvarez was fighting with the Mexican Army. Both armies fought against each other. Alejandro badly wounded Francisco, he consequently lost consciousness. Don Alejandro, like a gentleman and without knowing they were cousins, sparred Francisco's life. When the battle was over, Alejandro's sisters gathered the badly injured soldiers and returned them to their hacienda.
In Don Alejandro's home, his mother, Maria Alvarez, and her daughters healed both of them with the family's favorite dish, "Fajitas". The dish is based on an old Mexican recipe of spiced grilled meat and vegetables. Francisco recognized the delicious recipe of slowly grilled fajitas as the same his grandmother used to make in Monterrey. He spoke about this to his new friends and discovered that they were cousins.
